Coffee purchased from these retailers will consist of specialty Arabica beans that meet very high standards of both quality and growing conditions. “Specialty” is an actual grade of coffee – the highest. Beans that meet this standard have almost no noticeable defects.

The person roasting is an artisan, a member of the Roaster’s Guild, which is part of the Specialty Coffee Association of America (SCAA). (The SCAA is a trade association that promotes excellence in the specialty coffee industry through education and training.) To him or her each pound is precious and their survival relies on your satisfaction. Roasting is done in small batches and the fresh coffee is shipped directly to your home. Perhaps start with the office favorite, Columbian, and then expand to a pleasant, fruity Ethiopian. Experience the difference between a Guatemalan and a Nicaraguan. Or a Kenyan and a Tanzanian.

For the best tasting cup of coffee it is best to buy whole beans and grind them just before brewing. Coffee can be ground by whirling blades — a blade grinder, or crushed by two sets of precisely milled metal teeth called burrs. A burr grinder is considered superior to the blade style because it grinds more evenly.

If you want to brew coffee in a way that brings out all of its body, richness, and flavor use a French press. Regardless of price, they all do the same thing the same way. Operation is very simple: dump in your coarsely ground coffee, add hot water (the correct brewing temperature is 195-205 Fahrenheit), stir, and wait 4 minutes (enjoy the aroma while you wait). Then press down the plunger and pour the coffee into your cup.

Let’s say you don’t want to mess with the press. The traditional kitchen countertop, drip coffee maker is easier to clean and more practical when brewing for groups of people. Lastly, how long will that pound last? The standard brewing method is 1 tablespoon (approximately ¼ oz) of ground coffee per 6 ounces of water. (You can adjust the ratio to your taste.) First start by heating a cup of sugar with a pinch of salt, and a stick of butter in a sauce pan. Once everything has melted add one teaspoon of vanilla extract, and four ounces of chocolate. Continue to mix to stop it burning until it has all melted. Once it has all melted add one tablespoon of freshly ground coffee. You can also use two teaspoons of espresso coffee for a different taste.

Carry on mixing for a few minutes, then put it all into a mixing bowl. Let it cool for a little, however it should still be warm. Mix in three whole eggs and one cup of flour. Pour this mixture into a baking tin, bake in the oven for around 30 minutes.

Black Russian Cake

Choose your favorite chocolate cake recipe and follow it as normal, add in a cup of vegetable oil, one packet of chocolate pudding, four whole eggs and half a cup of creme de cacao. Now add one cup of Russian coffee, to make this mix together:

- 1/2 oz Kahlua

- 1 oz Vodka

- 5 Oz black coffee

Mix everything together until you are left with a smooth mixture, bake this for 45 minutes at 177C.

This is how coffee must be’. I mean really! It’s a drink goddamn it. A glorious, delicious, wondrous, must have before anything else in the morning drink. And I’m addicted to the stuff and have been for years. But it must be good, it must be strong, and without a doubt, it must be Italian.

So our quest for the coffee to die for must and does take us to Rome. For the sake of this story, lets just accept the fact that between them, Rome and Naples make the best coffee in all its forms. The place exudes coffee aroma, and is always busy with Italians flying in and out. The art and mystery of coffee making is here for all to enjoy. For a long time Caffe S. Eustachio in Piazza di Eustachio was considered the best in town. But its own popularity has encouraged the standard to slip, and while the coffee is still good, it isn’t a working bar anymore. More of a tourist destination, although a very pleasant one.

This story however is a tribute to all those unsung, wonderful barmen in Rome who dedicate their lives to helping us start another day with a great coffee! You know the good ones because their verbal banter is relentless and is always polite and entertaining. Their eyes, and I swear they have a set in the back of their head, never miss a person. Their ears never miss an order, which is usually yelled from a group of several people, newspapers in hand wanting their first coffee for the day. Whether it’s a cappuccino, a caffe lungo, a macchiato or a caffe corretto in the winter months with a drop of whisky, they never miss a beat. Their coffee is my joy. It encourages me to believe that all is well in the world. Their character and manner is a delight in this city, where often you get shortchanged with both. This is a local joint, Roman and a rarity in the old centre and it’s ruled over by Renato who is more Roman than Romulus and Remus! Costa Rica, Coffee Ambassador to the World, the Switzerland of Central America

Costa Rica is a peaceful country with beautiful geography, beaches, natural habitats with amazing wildlife and flora. This country also has one of the best climates in the world. Costa Rica is also a politically and economically stable country, one of the oldest democracies in Latin America. This nation does not have a permanent standing army but maintains small forces capable of law enforcement and foreign peacekeeping. Costa Rica is slowly becoming a computer technology power in the region attracting many foreign investors. The accessibility to computer technology has a very positive effect on its national educational system. In addition, this country has a national “passion for coffee, the grain of gold.”

The five main geographical areas of the country are: the Tropical Lowlands (Pacific and Caribbean Coasts); the North Central Plains; the Central Valley, and the Northwest Peninsula. From a governmental standpoint, the country has seven provinces: Guanacaste, Alajuela, Heredia, Limón, Cartago, San José and Puntarenas. Most of the regions have rivers, mountains, volcanoes, valleys and coffee, of course.

The highest mountain in Costa Rica has an elevation of about 12,450 feet and is called the Chirripó. Mountain ridges run across the entire country, interrupted by valleys which are extremely fertile areas. Costa Rica is located at the heart of one of the most active volcanic regions on earth, part of the Pacific Rim of Fire. Costa Rica has 7 of the isthmus’ 42 active volcanoes and an additional 60 dormant or extinct ones.

The best gourmet specialty coffee anywhere in the world grows in volcanic soil at high elevation. This is true in Costa Rica where the coffee is excellent and is enjoyed with all meals. Coffee is often prepared by many Costa Ricans by pouring hot water through grounds held in a sock-like device although many people use regular coffee makers and other coffee equipment. Costa Ricans talk often about coffee and all the benefits derived from the brew. It is a common practice for Costa Ricans to serve coffee with sugar already added to it or mixed with milk. If you find yourself in this situation, either ask for black coffee or enjoy the cup “like a native.”

What are the different kinds of coffee available in Costa Rica?

Café La Carpintería:” from the Tres Ríos zone, in the Central Valley area. Type: Strictly Hard Bean (SHB). The cup has exquisite balance between body, aroma and acidity.

Café Atarazu:” from the Tarrazu zone, a volcanic mountain area in the Great Mountain Range named Talamanca. Type: Strictly Hard Bean (SHB). The cup has a very good body, exquisite aroma and excellent acidity.

Café El Gran Vito:” from the Coto Brus zone, the far land of the country. Type: Strictly Hard Bean (SHB). Italian immigrants started this coffee growth which has a unique string taste, light, and reminds those who drink it of the mountains and forests.

Café Zurqui:” from the Heredia zone, one of the oldest coffee plantations areas in the country. Type: Strictly Hard Bean (SHB). Excellent bean quality, with high acidity, very good body and aroma.

Café Ujarraci:” from the Cachí zone, a fertile valley with lakes and crystal clear waters. A unique coffee with special characteristics that Europeans, Americans and Japanese gourmet coffee drinkers really like.

Café Buena Vista:” from the San Isidro del General zone, in the Valle del General (General’s River Valley). This valley is surrounded by the most impressive mountains in Costa Rica. The cup has good aroma and body and great acidity.

Counting Calories in Your Cup of Coffee

Because many people are becoming more conscious with their health, they usually count calories how many in the food they are taking, including calories in cup of coffee.

Coffee is actually a health drink even though it may have negative associations due to its high acid content. Several health benefits have been linked to drinking coffee in moderate amounts daily.

Some countries such as Singapore have government programs that promote the consumption of healthy food and drinks. The Singapore Government has launched the ‘Healthier Choice Food” Program which promotes healthy grade food. One of the products being endorsed is Nestle Nescafe because of the low calorie count of instant coffee.

The number of calories in cup of coffee varies. Surprisingly,the lowest calories count is actually brewed black coffee. This is because coffee in itself and without any additives has almost zero calories.

An 8 ounce cup of java brewed from grounds was found to contain a mere 2 calories, according to the USDA nutrient database while instant black coffee contains only 4 calories. These calories come from a tiny amount of protein and some of the mono-unsaturated oils in the beans.

The factors that increase the calorie count in coffee are the additives. As your cuppa is naturally bitter so in order to offset the bitter taste, sweeteners such as sugar, milk, cream and other syrups are added to it.

These additives are usually packed with fats thus resulting in the increase in calories.

The more additives added to the coffee, the more calorie content it contains. For instance, coffee with whole milk contains 12 calories. On the other hand, coffee with whole milk and sugar in it will contain at least 60 calories.

Furthermore, the larger the drink volume, the more additives are needed, hence the larger the calorie count in it. For instance a 16 ounce of coffee will require more milk than an 8 ounce of coffee.

So if it is the calories you are watching, it is best to either brew your own or take instant coffee and it would be good to avoid going to cafes.
